A heady combination of lemongrass and ground rhizomes flavour peanut sauce. The recipe originates from Jakarta and the Chinese in Malaysia use sweet potato as their sauce base, while the Muslims use peanuts. In Vietnam their satay sauce is a blend of Chilli oil, palm sugar and peanut powder, with intensely flavoured, pungent seasonings.
