Mainly a good article, but...
About the brining...KFC soaks their chicken parts overnight in a saline and spiced solution, while the article says never overnight.
Also, the article recommends fresh oil everytime. In, for example, the easily read and thoroughly explained "I'm Just Here For the Food", by Alton Brown, but based on many worthwhile tomes of culinary information, it is written and even illustrated about frying in oil, and why a used oil actually cooks better.
Keep in mind that KFC uses pressure cooker fryers, and usually cooks for 14 to 16 minutes, immersed. Original is dipped in a wash, containing some egg proteins, then dipped in breadcrumbs and the "11 secret herbs and spices" then racked and fried.
Extracrispy is dipped in a different wash, then the crumbs, wash again, and recrumbed, then fried.
Also, extra crispy comes from bigger, slightly fattier chickens than the original.
It was a hobby in college, I worked at five different chains.
